My mother found this recipe many years ago and it became an immediate favorite that was served every year. When my mom became unable to cook, my daughter, Kim, took over making and bringing this pie. It may sound unusual, but believe me, it’s delicious!
- 3/4 C cold milk
- 1 small pkg. vanilla instant pudding
- 1/2 C pumpkin (solid-pack; Mother used a little more than 1/2 C)
- 3/4 tsp. pumpkin pie spice
- 2/3 C chocolate chips
- 3 1/2 C Cool Whip
- 1 graham cracker crust
Mix milk and instant pudding. Let stand 5 minutes. Blend pumpkin, spices, chips and 2 C Cool Whip. Stir into pudding. Pour into pie crust. Refrigerate until ready to serve. Top with remaining Cool Whip.
