RECIPE MONDAY: Hot Chicken Salad Casserole

This is a wonderful casserole – great to take to your next women’s fellowship!

  • 4 boneless chicken breasts, cooked and diced
  • 1 C finely chopped celery
  • 1 C chopped pecans, walnuts or almonds
  • 1 C chopped seedless red and green grapes
  • 3 t finely chopped onions
  • 1 t lemon juice
  • 1/2 t salt or to taste
  • 3/4 C mayonnaise
  • 1/2 – 1 C grated cheddar cheese
  • 1 1/2 C crushed potato chips

Preheat oven to 350 degrees. Mix first 8 ingredients and transfer to a buttered baking dish. Top with cheese and crushed potato chips. Bake for 30 minutes or until brown. 4-6 servings.
