RECIPE OF THE WEEK: Stuffed Chicken Breasts

Boneless chicken breasts (the number of chicken breasts you need to feed your family – I                                              used 4 so Dave and I had leftovers)

1 package cream cheese, softened

2-3 chopped green onions

3/4 cup grated sharp cheddar cheese


Barbeque Sauce

Directions: Pound chicken breasts to 1/4 to 1/2 inch thick. Mix cream cheese, chopped green onions, and cheddar cheese. Place a small amount of mixture in the center of the chicken breast and roll up. Wrap a slice of bacon around the rolled chicken, securing with toothpicks. Spray the bottom of a pan with nonstick spray and place chicken in pan. Pour BBQ sauce over it. Cook at 350 degrees for 30-45 minutes or until chicken is done in the center.

I served roasted red potatoes and fresh homemade coleslaw with this dish. It was delicious. The filling also makes a great dip with crackers.
